Lentil Dip Recipe

I love receiving new recipes! Here is one from my friend, Chris G. I hope you enjoy it!

Lentil Dip

1 cup lentils sprouted, (should be about 2 cups after sprouting)
1-2 scallions, thinly sliced
2 Tbsp. Olive Oil (Avocado or Flax works too)
2 Tblsp. pure lemon juice
1 tsp. onion powder
1/2 tsp. cumin powder
1 tsp. Himalayan salt
1 Tbsp. garlic powder
1 cup diced tomatoes
1 cup diced avocado
1/8-1/4 cup minced cilantro, parsley, dill, or basil (I prefer cilantro)
1/2 carrot, thinly sliced
1 stalk celery, thinly sliced


Sprout the lentils. Mix all the ingredients together and adjust the flavors to taste. Some fun additions are dulse flakes, peas, corn, or minced red bell peppers. Enjoy!!!
